Warm and Cheesy Spinach Bites
These luscious appetizers look like they're difficult to make, but the ready made dough makes it a snap.

10 oz package of
thawed and drained
puff pastry (store bought)
or half and half
Preheat oven to 400 degrees.
Place the defrosted spinach into a sieve and strain out any remaining liquid. Use paper towel to remove any remaining moisture from the spinach.
Line two trays with parchment paper and set aside.
Beat the egg and cream in a small bowl with a fork.
In a medium bowl combine: spinach, cream cheese, asiago cheese, mozzarella, salt, pepper, nutmeg, and garlic.

Spread mixture evenly over the pastry sheets.
Starting at a short side, roll up the dough like a jelly roll.
12 (1-inch) slices.
Place the slices, cut-side down, onto 2 baking sheets. Brush the slices with the egg mixture.
Bake for 12-15 minutes, until lightly browned.
Serve immediately or keep warm on a warming tray.
Asiago can be substituted with Manchego, Provolone, or Jack cheese.
