Pumpkin Pie Oatmeal
My ultimate breakfast treat is served with a splash of cream, walnuts, and dried cranberries.
- 1 cup Old Fashioned Rolled oats
- 1 cup hot Water
- 2 cups Almond milk (or milk of choice)
- 1 cup Pumpkin shredded
- 1 tbsp Maple syrup
- 1/4 tsp Salt
- 2 tbsp Raw sugar
- 1 tbsp Pumpkin spice 1 tsp ground cinnamon, 1/4 tsp nutmeg, and 1/4 tsp ginger, 1/8 tsp cloves
- 1 tsp Vanilla extract
Place the oats to a small pot and add water. Let it sit for several hours or overnight.
Wash, peel, and shred pumpkin on a medium side of your box grater or in a food processor.
Add pumpkin, milk, and the rest of ingredients and stir well.
Cook over medium heat, bringing it to a simmer.
Reduce heat and cook for 30 minutes until pumpkin has softened and oatmeal is creamy. Stir frequently.
Serve with additional maple syrup, butter, pecans, pumpkin seeds, shredded pumpkin, or with your favorite toppings.
