Quick Zesty Avocado Salad

Fresh mango will tone down the heat and add yet another texture to this salad. To further reduce heat, substitute jalapeno with a finely diced green bell peppers.

  • 2 Avocados sliced
  • 1 pint Cherry tomatoes halved
  • 1 Medium red onion thinly sliced
  • 1 Jalapeno seeded and finely diced
  • 2 cloves of Garlic minced
  • 2 tbsp Lime juice
  • 3 tbsp Olive oil
  • 1/2 tsp Red pepper flakes
  • Kosher salt
  • Black pepper
  • 1/4 tsp Cumin
  • 1/4 cup Cilantro finely chopped
  • 12 oz Arugula or other greens


  • In a large bowl combine avocados, cherry tomatoes, red onion, and jalapeno.
  • In a separate bowl whisk lime juice, salt, pepper, cumin, and add olive oil.
  • Add garlic, red pepper flakes and cilantro, mix well.
  • Dress your salad and serve on a bed of greens.
