Pumpkin Pie Oatmeal

Pumpkin Pie Oatmeal

Ingredients
  

  • 1 cup Old Fashioned Rolled oats
  • 1 cup hot Water
  • 2 cups Almond milk (or milk of choice)
  • 1 cup Pumpkin shredded
  • 1 tbsp Maple syrup
  • 1/4 tsp Salt
  • 2 tbsp Raw sugar
  • 1 tbsp Pumpkin spice 1 tsp ground cinnamon, 1/4 tsp nutmeg, and 1/4 tsp ginger, 1/8 tsp cloves
  • 1 tsp Vanilla extract

Instructions
 

  • Place the oats to a small pot and add water. Let it sit for several hours or overnight.
  • Wash, peel, and shred pumpkin on a medium side of your box grater or in a food processor.
  • Add pumpkin, milk, and the rest of ingredients and stir well.
  • Cook over medium heat, bringing it to a simmer.
  • Reduce heat and cook for 30 minutes until pumpkin has softened and oatmeal is creamy.
    Stir frequently.
  • Serve with additional maple syrup, butter, pecans, pumpkin seeds, shredded pumpkin, or with your favorite toppings.
