Pumpkin Pie Oatmeal

Pumpkin Pie Oatmeal
My ultimate breakfast treat is served with a splash of cream, walnuts, and dried cranberries.
Ingredients
- 1 cup Old Fashioned Rolled oats
- 1 cup hot Water
- 2 cups Almond milk (or milk of choice)
- 1 cup Pumpkin shredded
- 1 tbsp Maple syrup
- 1/4 tsp Salt
- 2 tbsp Raw sugar
- 1 tbsp Pumpkin spice 1 tsp ground cinnamon, 1/4 tsp nutmeg, and 1/4 tsp ginger, 1/8 tsp cloves
- 1 tsp Vanilla extract
Instructions
- Place the oats to a small pot and add water. Let it sit for several hours or overnight.
- Wash, peel, and shred pumpkin on a medium side of your box grater or in a food processor.
- Add pumpkin, milk, and the rest of ingredients and stir well.
- Cook over medium heat, bringing it to a simmer.
- Reduce heat and cook for 30 minutes until pumpkin has softened and oatmeal is creamy. Stir frequently.
- Serve with additional maple syrup, butter, pecans, pumpkin seeds, shredded pumpkin, or with your favorite toppings.
