Mama’s Crispy Chicken Fritters

  • 1 lb Chicken Breast diced
  • 2 cloves Garlic crushed
  • 2-3 tbsp Panko bread crumbs
  • 2 tbsp Parmesan cheese shredded
  • 2 Eggs beaten
  • 1/4 cup Cream or half-and-half
  • 2 tbsp Mayonnaise
  • 1 tbsp Fresh Thyme finely chopped
  • 1 tbsp Fresh Parsley finely chopped
  • 1/2 tsp Smoked paprika
  • Kosher Salt to taste
  • Pepper to taste
  • 2 tbsp Vegetable Oil


  • Cut chicken breast into a small dice. 
  • In a bowl combine diced chicken, garlic, Panko, Parmesan cheese, eggs, mayo, thyme, parsley, paprika, salt and pepper.  Mix well.
  • Refrigerate mixture for at least 1 hour.
  • Heat a large non stick pan over medium heat and add 1 tablespoon of oil.
  • Using a tablespoon, place batter in the pan. Do not crowd the pan, 4-5 pancakes at a time.
  • Cook the pancakes about 3-5 minutes on each side, until browned.
  • Place the pancakes on a paper towel to drain.
  • Add more oil to the pan and continue to fry the fritters until mixture is gone,.


Turkey breast will also work well with this recipe.
