Granny Smith Raw Beet Salad

This recipe might seem healthy, but unsophisticated.  Well, take my word for it, this quick raw beet salad will not only give you a shot of energy but will also impress with complex flavors. 

Why not enjoy your vitamins in the most delicious way? Fiber, Folate (vitamin B9), Manganese, Potassium, Iron, and vitamin C, vitamin A, vitamin E, Phosphorus, Potassium, B1, B2, B6, Biotin, Niacin, Pantothenic acid never tasted this good!

Keep in mind, that raw beets are not as sweet as their roasted counterparts. The addition of a tart apple like Granny Smith, delivers a lot of flavor and another source of acidity.

I love the texture of a raw beet. It is similar to an apple, but a bit more delicate. I bet, you will find it really pleasing. The toasted walnuts round up this salad with a great crunch!

Finally, the addition of cinnamon gives this salad an unexpected twist. These beets are savory and earthy. I suggest you rest this salad on a bed of arugula for a zesty affair.

Granny Smith Raw Beet Salad

Ingredients

  • 1 Large Beet peeled and shredded
  • 1 Granny Smith Apple shredded
  • 1/4 cup Walnuts toasted and shopped

Dressing

  • 1 tsp Apple Cider Vinegar
  • 1.5 tbsp Olive Oil
  • Cinnamon optional
  • Kosher Salt

Instructions

Dressing

  • In the bowl, whisk Salt, Cinnamon, Vinegar, and Olive oil.

Salad

  • Wash and peel your Beet
  • Wash and peel your Granny Smith Apple
  • Grate the Beet and an Apple using the large side of a box grater.
  • Combine grated Beet and Apple with dressing and mix well.
  • Top with chopped Walnuts.
  • Serve on the bed of your favorite greens.

Notes

Hazelnuts and Pumpkin Seeds are another great option if Walnuts are not your favorites.
