  • 1 10 oz package of frozen Spinach thawed and drained
  • 2 sheets of puff pastry (store bought) defrosted
  • 1 egg
  • 1 tsp heavy cream or half and half
  • 1 cup Asiago cheese shredded
  • 6 oz Cream cheese softened
  • Salt to taste
  • Pepper to taste
  • 1/2 tsp Nutmeg ground
  • 1 cup Mozzarella shredded
  • 1-2 cloves of Garlic minced

  • Preheat oven to 400 degrees.
  • Place the defrosted spinach into a sieve and strain out any remaining liquid. Use paper towel to remove any remaining moisture from the spinach.
  • Line two trays with parchment paper and set aside.
  • Beat the egg and cream in a small bowl with a fork.
  • In a medium bowl combine: spinach, cream cheese, asiago cheese, mozzarella, salt, pepper, nutmeg, and garlic.
  • Roll each pastry sheet into a rectangle. Do not stretch the dough.
  • Spread mixture evenly over the pastry sheets.
  • Starting at a short side, roll up the dough like a jelly roll.
  • Cut into about 12 (1-inch) slices.
  • Place the slices, cut-side down, onto 2 baking sheets.  Brush the slices with the egg mixture.
  • Bake for 12-15 minutes, until lightly browned.
  • Serve immediately or keep warm on a warming tray.

Asiago can be substituted with Manchego, Provolone, or Jack cheese.
