Quick Zesty Avocado Salad
You are right, this Quick Zesty Avocado Salad is reminiscent of guacamole. I don’t deny it. Furthermore, I will freely confess my love for guacamole and each of its individual ingredients. However, this fresh and zesty salad of creamy avocado tossed with cherry tomatoes, red onion, cilantro, and a tangy lime juice dressing is a delicious alternative.

Quick Zesty Avocado Salad
Fresh mango will tone down the heat and add yet another texture to this salad. To further reduce heat, substitute jalapeno with a finely diced green bell peppers.
Ingredients
- 2 Avocados sliced
- 1 pint Cherry tomatoes halved
- 1 Medium red onion thinly sliced
- 1 Jalapeno seeded and finely diced
- 2 cloves of Garlic minced
- 2 tbsp Lime juice
- 3 tbsp Olive oil
- 1/2 tsp Red pepper flakes
- Kosher salt
- Black pepper
- 1/4 tsp Cumin
- 1/4 cup Cilantro finely chopped
- 12 oz Arugula or other greens
Instructions
- In a large bowl combine avocados, cherry tomatoes, red onion, and jalapeno.
- In a separate bowl whisk lime juice, salt, pepper, cumin, and add olive oil.
- Add garlic, red pepper flakes and cilantro, mix well.
- Dress your salad and serve on a bed of greens.
