Quick Chicken Fritters


Quick Chicken Fritters
Transform chicken breast into a light, fluffy, and cheesy delight the whole family will love.
Ingredients
- 1 lb Chicken Breast diced
- 2 cloves Garlic crushed
- 2-3 tbsp Panko bread crumbs
- 2 tbsp Parmesan cheese shredded
- 2 Eggs beaten
- 1/4 cup Cream or half-and-half
- 2 tbsp Mayonnaise
- 1 tbsp Fresh Thyme finely chopped
- 1 tbsp Fresh Parsley finely chopped
- 1/2 tsp Smoked paprika
- Kosher Salt to taste
- Pepper to taste
- 2 tbsp Vegetable Oil
Instructions
- Cut chicken breast into a small dice.
- In a bowl combine diced chicken, garlic, Panko, Parmesan cheese, eggs, mayo, thyme, parsley, paprika, salt and pepper. Mix well.
- Refrigerate mixture for at least 1 hour.
- Heat a large non stick pan over medium heat and add 1 tablespoon of oil.
- Using a tablespoon, place batter in the pan. Do not crowd the pan, 4-5 pancakes at a time.
- Cook the pancakes about 3-5 minutes on each side, until browned.
- Place the pancakes on a paper towel to drain.
- Add more oil to the pan and continue to fry the fritters until mixture is gone,.
Notes
Turkey breast will also work well with this recipe.
